Tomatoes are such a great food because of their versatility.This is most simple and easy to prepare tomato with rice recipes.
2 tablespoons Extra varjin olive oil
2 garlic cloves, minced
４ medium tomato
3/4 teaspoon Sea salt
3/4 teaspoon Soy sauce or tamari soy sauce
Fresh thyme or basil
1/2 teaspoon ground black pepper
In a medium saucepan, heat the oil over medium heat. Add garlic and cook, until tender, about 2 minutes. Add the tomato, Sea salt and Soy sauce Black pepper and cook, not stirring, until the tomato starts to soften, over low slowly heat about 15 minutes.
Serve hot steamed rice in a deep rice bowl. Put the tomato topping on the top of rice. Place some thyme or basil on the top if you would like.
